In recent years, deep-frying turkeys has become a holiday tradition in some households. Many people swear by the perfect combination of a crispy exterior with the flavorful and juicy meat inside. As with any time you plan to change up a traditional recipe, you need to be aware of some tips for frying the perfect turkey this holiday season because, let’s face it, several people are counting on you to deliver the star of the dinner.

  1. Know the basics. Deep-fryers are essentially a large stainless-steel stock pot with a big propane burner and stable legs, and either a turkey rack or a large basket. When defrosted, the turkey is descended into oil that has been pre-heated to the appropriate temperature, cooks, and then is taken out to be enjoyed at the dinner table.
  2. Most turkey fryers are powered by a standard 20-lb propane gas tank, the same kind that you buy for your gas grill, so make sure you’ve got a full one on hand before many stores close for the holiday.
  3. Similarly, ensure that your turkey fryer has the proper hose and gas regulator assembly. This critical part regulates the gas pressure for your fryer.
  4. You’ll also need both a meat thermometer as well as an oil thermometer. For deep-frying turkey, peanut oil is considered the best, although vegetable oil will also suffice. It is recommend to keep the oil temperature between 350° and 375°F.
  5. Lastly, be safe! Always use your fryer outdoors, away from buildings and other combustible materials. Do not overfill the fryer with oil. Oil spillover can engulf the fryer in flames. Use mitts or potholders before touching the pot, lid, or handles. You're working with fire and hot oil, so be extra vigilant around the fryer to make sure no children, pets, or guests who may have had a few too many drinks get too close. Do not leave the fryer unattended. Keep an all-purpose fire extinguisher nearby, and even after you’ve finished cooking the turkey, do not allow children or pets near the fryer as it will remain hot for hours.
